Ceramic baking beans are perfect for baking blank, i.e. without filling, in tarts, shortcrust pastries and other pastries.
They are used both as a weight and as heat conductors to ensure even baking. They prevent the dough from swelling or creating air bubbles that prevent the cake from being properly filled.
They are the hygienic and odourless alternative to beans, chickpeas and other legumes.
They are spread on top of the dough once it has been rolled out in the baking tin. After cooking they can be reused for further preparations.
